Banana pancakes





These are delicious and the recipe is easy to follow and you can substitute the apples for whatever fruit you have (which is great for avoiding any food waste!!).



Makes 8-10 pancakes


Ingredients:

  • 2 bananas, mashed

  • 1 cup oats

  • 1 egg

  • 1 grated apple

  • 1 tsp cinnamon



Step 1. Mix all the ingredients together in a bowl


Step 2. Add a tablespoon of batter into a non stick pan, leave the pancakes for 2-3 minutes until they’re golden brown on one side and then flip.


Step 3. Once the pancake is golden brown on both sides remove from the pan



You could also make a batch and then have for breakfast throughout the week- you can eat them hot or cold



We served ours with some fresh berries (frozen berries would be perfect too!) and Greek yogurt with a drizzle of honey.
