Gluten free mince pies

These gluten free mince pies are delicious. Perfect for getting into the Christmas spirit!



For the pastry:

  • 350g gluten free flour

  • 250g unsalted butter

  • 125g caster sugar

  • 1 tbsp milk for glazing


For the filling:

  • 600g Gluten free mincemeat

  • 1 apple - finely chopped

  • 2 satsumas - finely chopped

  • 50g dried cherries



Step 1: Mix together the flour and butter, work together into breadcrumb consistency.


Step 2: Add in the caster sugar and mix together into a ball. Knead it together briefly!


Step 3: Let the dough rest for 10-15 minutes in the fridge. Pre-heat your oven to 220C/200C fan.


Step 4: Mix your mincemeat, apple, dried cranberries , and satsuma together in a bowl.


Step 5: Roll out your pastry to approx 2-3mm thickness. Using a round cutter, cut out 16 bases (approx 10-12cm) and 16 lids (approx 7-9cm).


Step 6: Place the bases into the muffin tray, add 1 generous tbsp of mincemeat into each one, cover with the lids.


Step 7: Glaze them with the milk and bake in the over for approx 15 minutes (or until they are golden).


Step 8: Once cooked, allow to cool and dust with icing sugar!
