Seeded crackers



These are such a great snack to have in the cupboard or great to serve for guests with some hummus or yoghurt dip and vegetables. Absolutely packed with plant points too! 😍


Ingredients:

* 120g rye flour

* 1/2 tsp salt

* 1/4 teaspoon baking powder

* 50g cup rolled oats

* 50g mixed seeds

* 2 tablespoon ground flaxseeds

* 2 tablespoons sesame seeds

* 1 tsp cumin

* 1 tsp paprika

* 3 tablespoon olive oil

* 75ml water or a little more if needed


Instructions:

  1. Preheat the oven to 200C.

  2. Add all the dry ingredients to a bowl and mix well : flour, salt, baking powder, oats, seeds and spices.

  3. Add the add oil and water to the bowl and mix until just combined. It should feel slightly stiff but still spreadable (add slightly more water if too stiff).

  4. Spread the mixture onto baking paper on a baking tray, flattening it a little. I then used a spatula to flatten down completely but a rolling pin works well too.

  5. Score the top of the dough to make squares or rectangles of the size you want the crackers to be.

  6. Place the baking tray in the oven and bake for around 20 minutes, until starting to brown.

  7. Leave to cool and then break into your cracker shapes!
