Making this one on repeat for brunch at the moment! This is not an authentic shakshuka but it is a delicious one. Perfect for these cooler mornings.
Serves 2
Ingredients:
1 medium onion, diced
2 garlic cloves, crushed
1 red pepper, diced
A healthy glug of oil
1 tsp Cumin
1 tsp paprika
1/2 tsp Chilli flakes
2 tins of tomato
4 eggs
Salt and pepper to taste
Feta cheese to serve
Parsley to serve
Step 1. Heat your oil in a pan and then sauté your onion for approx 10 minutes or until they are translucent.
Step 2. Add your peppers and garlic and saute for another 5 minutes.
Step 3. Add your spices and mix until fragrant
Step 4. Add the tinned tomato, add 1/2 a tin of water and then reduce to simmer for about 30 minutes.
Step 5. Make a well in your sauce to add your eggs. Cover the pan and cook for 5-8 minutes.
Step 6. When the eggs are ready- crumble the feta and sprinkle with parsley to serve
Serve with freshly toasted sourdough
